Big Bob’s Gourmet Red Raspberry Wing Sauce
Robert Erickson wanted to test my review team with something he has been working on, a new kind of wing sauce. Robert has been making this wing sauce for his friends and family, and now he wants some additional feedback from the chileheads. Imagine Red Raspberry flavor on chicken wings. Sounds different, right? We did a 3 person review of this test product not yet ready for the market. Is it worth Robert’s investment or not? Let us see what our panel had to say about it…

Thomas – what I know of pectin is that it’s used in things like jellies and jams as a gelling agent. In the case of this sauce it was probably used to make it less watery.
I’m surprised that Steve and Thom got the strong habanero smell. Mine was relatively weak and mainly had a faint raspberry aroma. I also didn’t get as much perceived heat. Maybe if I would have finished off 12 wings with the stuff I would have gotten the burn, but from my exposure I would classify it as “medium”.
Ya Scott, they got hotter as more were eaten.
I am not a big raspberry fan because of the seedy consistency. Not sure this would be my cup of tea/wing sauce. Maybe straining it or pureeing it would remove that issue. I think Robert can use the tips to improve upon the product and make it better.
I wonder if we just got some inconstant samples???
Raspberries on wings… to me it sounds like an hard sell. I wonder if it would fare better as a regular fruity hot sauce.
