This is the first of 3 reviews for TATS Sauces & Marinades. This is a company out of Wildomar, California that I first met at the Fiery Food Show in New Mexico last year. I was pleasantly surprised at how each sauce popped with flavor in my mouth. I definitely knew I would order from them as soon as I got home. I do not buy at the show because of the air traveling issue. Pretty much as soon as I got home I placed an order. It was the only company I did that with last year. I am absolutely in love with their Black Dahlia BBQ Sauce which we will also review in the upcoming weeks. I had not tried this sauce last year because they did not have it available at the time, but this year I did and now I have a new second favorite sauce of theirs. It did not create a lot of heat in my mouth, but the flavor combination of serrano and jalapeno peppers with the tomatillos and cilantro were right up my alley. AND NO, there are no ghost peppers in this sauce.
I was happy we setup some reviews finally with TATS. Besides this one and the Black Dahlia BBQ Sauce, we also have their Widowmaker which is chile de árbol sauce which screams Mexican fare. Well so does Ghost Town, but I will let my reviews tell you more about that.

Starting From Scratch…
TATS Sauces & Marinades humble beginning started in the kitchen of spicy enthusiasts Derek and Shauna Jellsey’s Wildomar, CA home. Shauna, with her experience as a chef for over ten years, would frequently treat her friends and family at backyard barbecues, by whipping up her homemade Original Barbecue Sauces to slather on their favorite meats. Derek, with a passion for all things spicy and a craving for more heat, mastered the art of mouthwatering hot sauces and found the perfect balance of ingredients that make-up his collection of Original Pepper Sauces.
In March 2010, an economic downturn provided hardships for the Jellsey family and they decided to take their sauces to local Farmer’s Markets with hopes of making a few extra dollars and sharing their love of good flavor and spice with the community. What started as a weekend endeavor to get through tough times, turned into a promising business venture when the sauces gained status as a local favorite and residents began demanding more. TATS quickly expanded to many of the Farmer’s Markets in the surrounding area and the Jellsey’s vision for their recipes expanded with each satisfied customer, including their Original Ghost Sauces.
Longtime friend and graphic designer, Dustin Van Duzee, joined the TATS team quickly, in order to help lighten the load for the Jellsey’s and take their dreams to the next level. With a degree in design and an understanding of how to turn a vision into a reality, Dustin helped the Jellsey’s create a unique brand for TATS, which appeals to a new generation of individuals looking to add flavor and heat to their kitchen and their grill.
With a year of selling sauces under their belt; TATS is currently in several stores, restaurants and farmers markets throughout Southern California and has a strong following that continues to grow at an amazing rate. TATS feels like the sky is the limit and is on a mission to continue to grow and share their high quality product with anyone wanting to embrace a collection of sauces that aren’t loaded with preservatives or watered down, but offer a rich taste and lots of heat!
