Hello fellow chileheads and lovers of all things hot & spicy. My name is Bill Moore and I review many different spicy products on my YouTube channel…Bill Moore’s Hot & Spicy Reviews. I’d also like to introduce my wife Myong because she has played a big part in introducing me to spicy foods. Myong and I met in Korea back in 1979 while I was serving in the U.S. Army. The savory, rich aroma of spicy Korean cuisine has filled the air of the Moore household for many years now, and we love to eat some of the classic dishes such as Kimchi, Bulgogi, Kalbi, Bibimbop, and fried Yaki-Mandu on a regular basis. Myong and I have been married for 36 wonderful years. We have two sons Steven and Daniel, and have been blessed with four beautiful granddaughters! Our fifth is a grandson, and he will be here in a couple of months!
After having served on active duty for 20 years in the U.S. Army I retired in 1996, and began a sales career in the insurance, banking, and financial services industry. I worked for several years with Prudential and then as a business banker with Wachovia/Wells Fargo. At the present, I’m working for Vanguard as a High Net Worth Client Relationship Administrator/Investment Advisor.
Ok…back to my channel. I have always enjoyed watching several YouTube channels that featured reviews for hot sauces, so one Sunday afternoon I said to myself….”I can do this” and sat down to record my very first hot sauce review. That was April 7, 2013, the day “Bill Moore’s Hot & Spicy Reviews” was born! I have been consistent in my reviews ever since and now have a catalog of about 1040 video reviews. I’m not into crazy spicy challenges, so I guess you could say that my channel focuses more on no-nonsense, detailed, and informative reviews of all types of hot and spicy products, but especially hot sauces and fresh chile peppers. Yes…on my channel you can watch me eat fresh whole chile peppers from the mildest to the world’s hottest. And I don’t throw up!! It’s really amazing to see how fast the spicy food industry is changing, and how hot sauce companies are using many different types of peppers and creating some very unique and delicious flavor profiles. As more and more people steadily become adventuresome eaters, we are now setting a place at the dinner table for hot sauce and other spicy products on a regular basis. My passion is to show how to really enjoy hot sauce in cooking and how to pair with the right foods. You will read this first hand each month for Chilehead Monthly when I pick out one of my new favorite products I think you need to know about.
For this month’s review I’d like to introduce a company that I discovered called Jabberwocky Foods, Inc., located in Altadena, CA. I absolutely love the flavor of jerk sauces and seasonings, so once I tried the Jamaican Jerk Sauces from this company, I knew they were something special, and some of the very best I’ve ever tasted. Susann Edmonds is the owner and creator of these wonderful products. Susann is an artist who works in many mediums. She is a Southern California native who has developed a taste for local ingredients, many of which she grows in her own Altadena backyard or finds in local farmer’s markets. Her travels to the Caribbean and Europe are also big influences on her cooking style. After years of experimenting with medicinal spices and beneficial herbs, Susann now focuses on traditional Jamaican flavors which blend Caribbean, African, East Indian, Chinese, Arawak Indian, Spanish, Dutch, and French influences.
Susann took her passion of cooking to a new level when her large gardens were used to host a charity event in the theme of a Mad Tea Party called “Through the Looking Glass” a fundraiser for the AIDS Service Center. This gave her the opportunity to “jerk” her dishes for a larger group of people.
She blends a myriad of spices in her jerk sauces, and also includes such ingredients as Red Wine, Tamari, Mango Puree, Coconut Sugar, Olive Oil, and Scotch Bonnet Peppers. She has three Jamaican Jerk sauces….a Smooth, a Sweet, and a Hot! All are exceptionally good. Use these sauces as a marinade and finishing sauce to make some jerk chicken or pork and you are in for a treat.
