Still dealing with the Thanksgiving Feast-Shopping-lag? You have your turkey leftovers and sides you are still munching on, trying decide if you ever want to eat like this again, right? Then all the emails that come to your inbox shoving sale after sale down your throat. Thinking that if the 2 afternoon emails from Amazon were better than the 3 from the morning. Not to mention the 20-30 since Thursday. If you have ever bought anything, you got reminded that you were a customer that needed reminding over and over again. I do not know about you, but the more I got, the less I wanted to buy from them. Even some of the small makers in our community flooded my inbox. Not just from their Facebook posts every day, but from their sale emails. Did they think I did not see the first 5?

Recently the finalists were announced for the 2016 Good Food Awards. The Good Food Awards is a prestigious award in the food community that honors local makers, farmers, artisan food producers, etc. that are committed to using as much local product as possible, and are committed to using a sustainable food source to produce their unique products. They received 1,937 entries for various categories this year, and the winners will be announced Friday, January 15, 2016, at a gala Awards Ceremony at Fort Mason Center for Arts & Culture in San Francisco.

Hello Chileheads,

Here in Quebec, the real hot sauces lovers are in small numbers, but are increasing year by year. Of these, one name often keeps coming up – Claude Dubé. Some media called the man with the Teflon tongue a legend. Certainly, you cannot remain indifferent when you see him eat peppers or sauces. I had the chance to meet him at the gathering of the first Annual Chili Quebec, and I found a man with an intense passion that he is not afraid to share. A colorful man with an attractive personality and when he speaks, people around him listen. Nothing seems to hurt him and any hot pepper sauce doesn’t seem to phase him. Not even the extracts; no product scares him. I asked him whether he felt some pain and his answer surprised me a little. Yes he feels pain, but he has been eating spicy food since the age of 6-7 years old, and he tolerates the burn and is able to ignore the pain. Go see his videos you’ll understand what I am talking about.

This month definitely needs a new name. It is such a negative to say NOvember. So for the rest of this column we are only going to refer this month in the positive and rename it as YESvember. Hey, it is such a great month with the beautiful colors of Autumn spreading across our great land. It is also a great foodie month with Thanksgiving bringing such great traditional dishes, and a chance for the Chilehead in all of us to spice up some of the dishes. Well, most families would object, but if you have a good turkey-enhancing table sauce or two, then you can still put the THANKS in Thanksgiving.

Welcome. This is the first installment of the Defcon Creator’s op-ed section. My monthly addition will contain my own ramblings, reader beware! It will discuss various facets of the hot sauce industry, as well as different perspectives on things going on within the industry as a whole, trends past and present, and things I’ve noticed and will comment on. In other words, you’ll never know what I’m going to say. Those who know me know I am never at a loss for words.

As many of you know, my radio show, DEFCON-versations, has been put on the back-burner for now. There is just too much stuff going on right now, and when the radio show is active, I want to give it my full attention. Perhaps many of you can relate to parts of your life being stupidly busy, well, I’m dealing with it now. Will the show return? Absolutely! I’ve already written about 10 show formats already, with guests like All-Spice Cafe, Torchbearer Sauces and Gemini Crow, and many more lined up as guests, so stay tuned.

For those that don’t know who I am, my name is John Dilley, Supreme Dark Overlord of Defcon Sauces, a rather well-known purveyor of Wing Sauces, Habanero Horseradishes and Dry Rubs. Being around for over a decade, we’ve taken a ton of awards, and our product reach is global. If you haven’t tried our products, treat yourself.
