As a kid, he and his grandfather would stay on his houseboat on the “Tchefuncte River” and catch a mess of catfish, clean them up and have a good ole’ fish fry with family and friends on weekends.

Fiber Joe Interviews Addiction Sauces at 2014 Fiery Foods Show

The Addiction story first started 19 years ago in New Orleans at a small restaurant called Street Car Po-Boys. They had some of the best po-boys around, my favorite being the firecracker. It had shrimp split down the middle stuffed with fresh jalapeno and pepper jack cheese all wrapped in bacon, breaded then deep fried. The restaurant had one big wall of hundreds of hot sauces on it. So it began, trying to find the best one. After tasting them all, there was not the satisfaction with any sauce to contain the right balance of heat, salty, acidic and sweetness. Making my own sauce seemed to be the way to go. Having gone to The Culinary Institute of America and working in many 5 star fine dining restaurants I started creating my own. Years went by making different sauces and testing them out on family and friends. I came to create two that seemed to have the overall best heat and flavor. So I knew the Habanero and Bhut Jolokia was where I would start…but what should I name the company.

Spicy Product Makers Round Table – Part 2

Part 2 of our interview with some of the spicy product makers in our Chilehead community continues where we left off. You can see Part 1 HERE. We elevate to more serious questions in this part including new spicy trends and tips for people who want to get into this industry. Unfortunately, the drinking that began well before the interview kicked off is now starting to take it’s toll with some of our participants. As the discussion continues we begin to lose a few of our makers to outside influences. In the end, I think we touched on some great points, and hope it is well perceived to those that have put in the time to watch it.

Our round table existed of Jeremy Walsh from Bigfats Hot Sauce, Ed Bucholtz from Born to Hula Hot Sauce, Steve Seabury from High River Sauces, Chuck Evans from Montezuma Brand Sauces & Salsas, Johnny McLaughlin from Heartbreaking Dawns and Joe Leicht from Flaming Joe’s, Inc. A big thanks to them all for giving us the time to do this. As well as a huge thanks to CaJohn for letting us use his place and private meeting room to house it in.

If we are lucky enough, we will get to do this round table discussion again with some other great spicy product makers at the NYC Hot Sauce Expo next month and/or the Bowers Chile Festival in September. Spicy Product Makers Round Table – Part 1

Whilst gathered at CaJohn’s Flavor & Fire Headquarters in Westerville, Ohio for the Fiery Food Festival Weekend at the North Market, I got a chance for a special interview. This special interview was with some of the faces in our great chilehead community. Since we had much fun over the years with the Bloggers Round Table, I thought it would be great to do a similar version with a select crew of our various award winning sauce makers. This is the 1st of 2 videos in which I get to ask some topical questions to this panel of hot sauce makers. To add to the discussion, there had been some drinking going on which only added to the conversation as you will soon find out. There is quite a bit of profanity, so please be aware of this before starting the video when surrounded by those easily offended. The discussion deteriorates pretty fast between part 1 and part 2 as you will soon find out as the liquor starts to kick in with some of the makers. 2013 Houston Hot Sauce Festival: Fiber Joe interviews Flaming Joe’s and Red Hot Robin’s Sauces

Flaming Joe and Red Hot Robin… The name says it all. I’ve been going to the Fiery Foods Show in ABQ for the last 12 years that I’ve lived there and the first thing you always see when you walk through the door are “The Gate’s of Hell” One side is Sam and his wife with Zack and Zane and the other side Flaming Joe and Red Hot Robin. Just the sight of “The Gate’s of Hell” sets the mood for the entire show. Just an awesome group of people. At the show in Houston rumor had it that Flaming Joe and Red Hot Robin were going to take a break from the hot sauce circuit. In the review you will see that the rumor is confirmed they will be taking a break, they will be dearly missed, but in the review you will also see who will be taking their place. It was awesome for me to finally get a chance to do an interview with Joe and Robin. We will miss them in ABQ and we hope they have an awesome time.

2013 Houston Hot Sauce Festival: Fiber Joe interviews Ed Currie from Pucker Butt

Ed Currie the Mad Scientist himself. I watched this man and his group of misfits blow the heads off of a number of people with his “Carolina Reaper Pepper”. Some threw up, some couldn’t breath, some needed medical attention. The passion that this man has for growing peppers and making sauce is incredible. Just about everyone in this industry knows who Ed Currie is. The man caries around a container of peppers everywhere he goes, and he eats the damn things like they’re candy. I got a chance to hang out with him not only at the show but a few times outside of the show. When you talk to this man about what he does he gets this little evil look in his eyes and rubs his hands together like a mad scientist. It’s a little creepy but at the same time really cool. This the first time I’ve actually had a chance to try the line of sauces that Ed has created. In the video we start from not so hot to holy crap that’s hot.

What can I say about Trevi and Becky Biles… EVERYTHING When it comes to Houston hospitality it doesn’t get any better than these two. The first 5 minutes that I met these guys I felt like I’ve known them my whole life. They both welcomed me and my boys with open arms. Trevi is the bass player for a band called VENOMOUS MAXIMUS out of Houston, TX. He and a couple of his closest buds put on one awesome little concert at the show (you can check some of it out on YouTube). Trevi is also a high school math teacher, I can tell you if I had a teacher as cool as Trevi when I was going to school I probably would have passed math. Now Becky is by far one of the coolest ladies you will ever get a chance to meet. And together the two of them make one awesome couple. Check out the video as we run through their line of kick ass sauces. YOU GUYS ROCK! It was so much fun getting a chance to know you guys, thanks for everything.

2013 Houston Hot Sauce Festival: Fiber Joe interviews Stretch of Grinder’s Signature Sauces

The first time I got a chance to meet Stretch from Grinder’s was at the 2013 Fiery Food Show in Albq, NM. There was this dude walking the show with a backpack full of sauce strapped to his back, introducing himself to all the different vendors and sharing his sauces with as many people as he could. He put this bottle of “Death Sauce” on Cajohn’s counter for everyone to try. As I watched everyone walk away in tears gasping for air, I said to myself I’ve got to meet this dude. About 10 minutes later he walked up to me and my boys and said “Hey you guys want some sauce?” He proceeded to pull out a bottle of each one of his signature sauces and gave a bottle of each to me and each one of my boys. We got to talking and he told me if I was ever in Kansas City to stop by and check out his restaurant GRINDER’S and GRINDER’S WEST, which by chance are right next door to each other. So 6 months later when I was in Kansas City I did so. With specially brewed beers, specialty pizzas, specialty sandwiches, totally kick ass wings, and a most awesome staff I’m glad I did. If you are ever in Kansas City you need to check this dude out. You won’t be sorry.

Lost in our YouTube archives from the Fiery Food & BBQ Show, we have Fiber Joe’s many interviews. Crazy Good Sauce Company is one of a handful of companies that we will share with you over the next couple of weeks. In 2012 we did 2 of their product reviews. One for Nikki’s Crazy Good Southwest Sweet Heat and the other Jimmy’s Crazy Good Red Chile Hot Sauce. Since those reviews they have created a whole line of unique hot sauces with flavors and ingredient combinations that we have not seen in the industry before. I personally am looking forward to their newest creation, a pineapple salsa due out in September. Perhaps, just in time for an entry into our charity driven Salsa Contest at the Houston Hot Sauce Festival? Those following the 2012 Lenny Awards all know how much I enjoy pineapple products. Fiber Joe just loves Fri-B-Que so much he had to stop by and see his good friend Mike Frison. They talk about their newest product, a ghost pepper hot sauce. They also bring up the All Purpose Seasoning as well.
