Winning Recipe: Round 3- Johnny McLaughlin

This is Johnny’s 3rd round victory and 3rd in a row. It was our St Patty’s spicy theme round. Johnny made a shepherds pie and an amazing cake. Check out the full recipe under the video if you are able to make such a masterpiece.

Recipes:

Spicy Shepherds Pie

Begin with a 1.5 lb boneless leg of lamb.

Rub generously with Three Hot Tamales Sweet rub and let sit overnight covered in refrigerator.

On the grill sear each side for about 2 minutes, then move to indirect heat for 20 minutes per side.

Let it rest for 20 minutes and chop it up, being sure to retain any juices.

Lay this in the bottom of your baking pan.

Next start with 3 cloves of diced garlic, and 1/2 diced shallot. (saute in butter)

Add 5 diced orange thai peppers, several diced carrots and 1 cup of peas. Continue to cook until slightly underdone. Lay atop the lamb.

Boil about 6 potatoes. Mash with some garlic, 2 tbs butter, 1/4 cup cream and some of your choice pepper powder or hot sauce. Add this atop the peas and carrot blend.

Let this bake in the oven at 300F for about 45 minutes.

Top with panko mixed with dried chanterelle mushrooms and then some shredded Irish Cheddar, let continue in the oven until golden and melted.

The Four Jewels Black Irish Cake

Below is the recipe for the batter, you will need to make this 3 times. The first should go in a large round cake pan, the 2nd you will add 1 tbs of a medium heat pepper powder and reserve, this goes in a smaller round cake pan. For the third you will add 1 tbs of a hotter peppers powder and reserve 1 cup, this one goes in a regular bundt pan. The 2 reserved cups will go in a mini bundt with 1 tsp of the hottest pepper powder.

These get baked off at 350F for 25-35 minutes.

4 (1 oz.) squares unsweetened chocolate
1/2 cup butter
1 cup water
2 cups flour
2 cups sugar
pinch of salt
1/2 cup buttermilk
1-1/4 tsp. baking soda
2 eggs, beaten
1 tsp. vanilla

After the cakes have cooled, you need to assemble them. Cut 6 straws to the height of the first level and then add a cut out paper plate. Place the 2nd level upon that. Repeat for the 3rd and 4th.

Basic White Icing:

12 cups confectioners’ sugar
3 cups shortening
6 tablespoons water
3 tsp vanilla extract
**add a couple of tbs of water if you need to thin out for icing.

Decorate your cake however you like, colors, peppers, etc.

Irish OOZE:

2 tbs butter
3/4 cup Irish Whiskey
12 oz caramel topping
1/2 cup confection sugar

Simmer all of the above until ready to pour into the cake.

    That’s a sweet pic of me and Rudy,Did you Rudy is HBD’s Inventory Control Manager and Credit Director! Such a hard worker.
