REVIEW: Mudflats’ Mango Chipotle
This is the 3rd of 6 products we are reviewing for the restaurant turned hot sauce company, Mudflats Bar & Grill. Our team of The Machine, the Spice Goddess and Chef Jeff sounds more like a bunch of reality TV characters, but let me assure you that they all know their stuff. Before we get to their reviews, let us see a recipe from the Mudflats recipe page:
Mango Pineapple Rice Pilaf
Preheat oven to 350 degrees
8 oz Bacon (Raw, Chopped)*
2 oz Olive Oil
In large Skillet on high heat render bacon in oil until browned and crispy.
1 Red Onion minced
1 Red Bell Pepper diced
1 stalk Celery Diced
1/2 fresh Pineapple, Cored and Diced
1 T minced Garlic
1 T minced Fresh Ginger
Add to crispy bacon and saute until all is softened.
2 C Long Grain Rice
Add to veggies and cook for 4 min.
2 1/4 C Water
3/4 C Mudflats Mango Chipotle
Add to Rice mix and bring to a simmer. Remove from Heat and cover with plastic and foil, and place in oven for 20 min.
Remove from oven and let rest on counter covered for 20 min.
3 T Chopped fresh Cilantro
3 T Chopped fresh Green Onion
Remove plastic and foil. Plate in large serving dish or separate onto plates and sprinkle with Fresh Cilantro and Green Onion.
*As a vegetarian dish eliminate bacon.
