Hello Chileheads,

Here in Quebec, the real hot sauces lovers are in small numbers, but are increasing year by year. Of these, one name often keeps coming up – Claude Dubé.  Some media called the man with the Teflon tongue a legend. Certainly, you cannot remain indifferent when you see him eat peppers or sauces. I had the chance to meet him at the gathering of the first Annual Chili Quebec, and I found a man with an intense passion that he is not afraid to share.  A colorful man with an attractive personality and when he speaks, people around him listen. Nothing seems to hurt him and any hot pepper sauce doesn’t seem to phase him. Not even the extracts; no product scares him. I asked him whether he felt some pain and his answer surprised me a little. Yes he feels pain, but he has been eating spicy food since the age of 6-7 years old, and he tolerates the burn and is able to ignore the pain. Go see his videos you’ll understand what I am talking about.

Claude’s favorite chili is the Butch-T Scorpion.  He loves to use it fresh, but he also likes to eat hot sauces like Hellfire which he is a proud ambassador of.  Indeed, Claude has the only complete collection of Hellfire bottles some of which are unique. His collection is very impressive with over 176 bottles including 57 reserve bottle art, 66 limited edition and 51 others are numbered bottles 1/1.

Claude’s philosophy is that when we eat chillies, we must first have fun and we should not eat products that are too strong for us. Wait and develop your resistance before you tackle extreme peppers. It must first be an enjoyable experience and not a torture session.  He advises to eliminate the peppers that are too bitter tasting and the extract sauces. Claude is very friendly and is always available to answer our questions. I know that in the US there are many like him, but not here, Québec is a small province and he’s a legendary figure. I am fortunate to have him as reviewer for my Facebook page Habanero Montreal. His videos are very interesting and especially impressive to watch.  I hope to have the chance to share with him and to share our passion for a long time with hot peppers.
